Himachal Pradesh is always famous for Himalayan landscapes and popular hill stations but apart from that we can get a very delicious and unique recipes from Himachal Pradesh. Today i love to share a very unique recipe from Himachal Pradesh which is called Sepu Vadi. It's a very famous recipe of Himachal Pradesh.Sepu vadis are made from split urad dal and traditionally it's cooked with spinach and curd gravy. The flavour of whole garan masala ,the strong flavour of mustard oil,the tangyness of curd and little sweetness of fennel powder makes this recipe amazing. This is very healthy recipe and for me the best way to give all the goodness to our kids. Try this.... Thank you

Ingredients Serving: 4

  1. For sepu vadi
  2. 1 cup split urad dal.
  3. 1 inch ginger
  4. 2 green chilli
  5. 1 teaspoon cumin seeds
  6. 1 teaspoon mustard oil
  7. Salt to taste
  8. Oil for deer frying
  9. For gravy
  10. 1 bunch spinach
  11. 1 cup curd
  12. 1 Cinnamon stick
  13. 4 CARDAMOM
  14. 1 bay leaf
  15. 4 cloves
  16. 2 red chilli
  17. 1 tablespoon mustard oil
  18. 1 teaspoon red chilli powder
  19. 1 teaspoon cumin powder
  20. 1 teaspoon coriander powder
  21. 1/2 teaspoon fennel powder
  22. Salt to taste

Instructions

  1. Soak urad dal for 5 to 6 hour,wash and drain all the water.
  2. Take blender jar put soaked urad dal,ginger,green chilli,cumin seeds and make a fine paste.
  3. Take the paste in a mixing bowl,add mustard oil and salt and mix properly.
  4. Then grease a plate with little oil and pour the urad dal mixter into the plate and steam for 10 to 15 minutes.
  5. Insert a knife to cheak,if the knife comes out clean then vadis are ready.
  6. Remove from the heat and cut in square size pieces.
  7. Heat oil in a pan and deep fry the vadis.
  8. To make spinach puree wash and blanch the spinach and make fine puree.
  9. Heat mustard oil in pan then add all the garam masalas and red chilli.
  10. Once they splattered ,add spinach puree and cook for 3 minutes on a medium flame.
  11. Then add all the powder masalas and cook for 2 minutes more
  12. Then beat the curd properly and add into the gravy. Stirring continuesly .
  13. Then add the vadis,salt ,some water if required.
  14. Cover and cook for 5 minutes on a low flame.
  15. Authentic sepu vadi with curd spinach gravy is ready. Serve with roti or rice.
