Ingredients Serving: 2

  1. 1 Fresh medium size brinjal
  2. Few sprigs of fresh coriander leaves
  3. 1 pc green chilli
  4. 1 small onion
  5. Curd 4tbsp
  6. Cumin 1/2 tsp
  7. Coriander seeds 1/2 tsp
  8. Black salt a pinch
  9. Salt as per taste

Instructions

  1. Wash and make long slits on the brinjal. Insert cloves of garlic and microwave for 3 minutes. It can be cooked in a covered pan too until it becomes soft and well cooked from all sides.
  2. When brinjal is cooked remove the skin and put it in the blender add green chilli and blend.
  3. Dry roast the cumin and coriander and grind it to a coarse powder.
  4. Chop the coriander leaves and onion.
  5. Whisk the curd add the blended brinjal, add salt and black salt and mix well.
  6. Sprinkle the cumin and coriander powder, garnish chopped onions and coriander leaves.
  7. Serve with roti or rice.
