Mutton do pyaaza, very close to my heart, is a beautiful mutton dish from India, full of flavour that comes from slow braising on low heat and onions are added in two stages, full of bold and rustic flavour, worthy of special occasions.

Ingredients Serving: 4

  1. 500 gm mutton boneless
  2. 1 cup onion, ginger garlic paste
  3. 1 cup tomato and green chilli paste
  4. 2 cloves
  5. 1 black cardamom
  6. 2 green cardamom
  7. 1/2 inch cinnamon
  8. 4-5 peppercorns
  9. 1 tsp turmeric powder
  10. 1.5 tsp red chilli powder
  11. 1.5 tsp coriander powder
  12. 1 tsp cumin. Powder
  13. 1/2 tsp cumin
  14. Salt and sugar for taste
  15. Coriander leaves
  16. 1cup fried onions

Instructions

  1. Boil the mutton with salt. U can reserve the stock for other dishes
  2. Heat oil in pan. Fry the sliced onions till golden
  3. In same oil add ghee. Add cumin seeds and onion ginger garlic paste. Saute well till golden.
  4. Add tomato chilli paste. Saute well. Add turmeric chilli coriander cumin powder. Till oil separates
  5. Add mutton Pieces and salt and sugar. Cook well. Till done. Add garam masala
  6. Add the coriander leaves and fried onions. To finish.
  7. Serve hot with paratha roti naan or rice
  8. Serve hot
