Ingredients Serving: 4

  1. 1 big sized Brinjal/ Baigan 1
  2. 2 boiled potatoes
  3. 2-3 finely chopped tomatoes
  4. 1 onion medium sized
  5. Few coriander leaves, finely chopped
  6. 1/2 tsp jeera/ cumin seeds
  7. 1 tsp amchur powder
  8. 1/2 tsp red chilli powder
  9. 1/4 tsp turmeric powder
  10. 1/2 tsp garam masala
  11. 1 tsp dhaniya powder
  12. 1/2 lemon juice
  13. Salt to taste
  14. 1-2 tsp oil

Instructions

  1. Roast the brinjal on the gas for 5-8 mins evenly so that it is cooked well.
  2. On the side boil the potatoes as well. Once it's done mash the potatoes and clean the outer skin of the brinjal, then mix it with the potatoes.
  3. Heat oil in a pan, add zeera to it, next add the finely chopped onions. Saute and cook till the onion turns golden brown in colour.
  4. Add the finely chopped tomatoes and cook till it leaves the oil from the sides. Now add in the turmeric powder, red chilli powder, garam masala, coriander powder and amchur powder to it. Mix it well.
  5. Add the brinjal and potatoes mixture into the pan and saute it for 5 mins. Lastly add salt to taste and lemon juice, then cover it with a lid and cook it for 2-3 mins more.
  6. Garnish it with green coriander leaves and serve it hot.
