Cucumber Kosambari

Ingredients to make Cucumber Kosambari

  • cucumber - 1 cup chopped
  • green gram dal - 1 tablespoon
  • green chillies - 2, chopped
  • Grated coconut - 1 tablespoon
  • salt to taste
  • lemon juice - 1 teaspoon
  • coriander leaves a few chopped

How to make Cucumber Kosambari

  1. First dry roast the green gram dal and soak it in warm water for half an hour. Half cook the dal, drain excess water and set aside. The cooked dhal should be slightly crunchy.
  2. In a bowl, add the chopped cucumber, green chillies, grated coconut, half cooked dal, coriander leaves and finally just before serving add salt and lemon juice.
  3. Mix everything well together. Serve.

My Tip:

Do not overcook the dal, it should be crunchy. Add the salt and lemon juice just before serving otherwise the salad will become watery.
