ABOUT Cucumber Kosambari RECIPE

It is a type of salad made with cucumber and green gram dal. It is a very traditional Udupi dish.

Ingredients Serving: 4

  1. Cucumber - 1 cup chopped
  2. Green gram dal - 1 tablespoon
  3. Green chillies - 2, chopped
  4. Grated coconut - 1 tablespoon
  5. Salt to taste
  6. Lemon juice - 1 teaspoon
  7. Coriander leaves a few chopped

Instructions

  1. First dry roast the green gram dal and soak it in warm water for half an hour. Half cook the dal, drain excess water and set aside. The cooked dhal should be slightly crunchy.
  2. In a bowl, add the chopped cucumber, green chillies, grated coconut, half cooked dal, coriander leaves and finally just before serving add salt and lemon juice.
  3. Mix everything well together. Serve.
