Amaranth Greens Coconut Milk Stew

Ingredients to make Amaranth Greens Coconut Milk Stew

  • amaranth leaves (chopped) - 2 cups
  • turmeric powder - 1/4 tsp
  • coconut milk - 1 cup
  • salt - to taste
  • sugar - 1 tsp
  • Ingredients for Wet grinding:
  • Freshly grated coconut - 1 cup
  • green chillies - 5 to 6
  • Small onions - 4
  • coconut oil - 2 tbsps (for garnishing)
  • curry leaves a few sprigs

How to make Amaranth Greens Coconut Milk Stew

  1. Wash and cook the amaranth leaves with less than 1/4 cup of water, adding turmeric powder and sugar.
  2. Allow it to cool and grind coarsely the amaranth leaves. (Do not make a smooth paste).
  3. Grind the grated coconut, green chillies, small onions to a smooth paste and keep aside.
  4. Mix the ground coconut paste and coarsely ground amaranth leaves adding required salt and water till you get the desired consistency. Cook for 10 minutes on a medium flame.
  5. Add in the thick coconut extract and mix well. Remove from the flame.
  6. Garnish it with raw coconut oil and curry leaves.
  7. Amaranth greens coconut milk stew is ready to be served.
  8. Serve hot with white rice, dosas, idlis, rotis etc.
