    Ingredients to make Best Ever Chocolate Cupcakes

    • 1/2 cup cocoa powder
    • 1 cup boiling hot water
    • 1 1/3 cups all purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 100 grams butter, room temperature
    • 1 cup granulated white sugar
    • 2 large eggs
    • 2 teaspoons pure vanilla extract
    • A pinch of salt
    • For the frosting (Cold Chocolate Ganache)
    • 200 grams chocolate
    • 150 ml cream
    • 1/2 tsp butter

    How to make Best Ever Chocolate Cupcakes

    1. In a small bowl mix the boiling hot water and the cocoa powder until smooth. Let cool to room temperature. In another bowl, measure out together the flour, baking powder, and salt.
    2. Beat butter and sugar until light and fluffy. Add the eggs, one at a time, beating until smooth. Scrape down the sides of the bowl as needed. Beat in the vanilla extract. Add the flour mixture and beat only until incorporated.
    3. Then add the cooled cocoa mixture and stir until smooth. Fill each muffin cup about two-thirds full with batter and bake at 180 deg C for about 20 minutes. Let it cool completely before you frost.
    4. For the frosting- Make ganache by boiling the cream and adding to the chocolate. Add in the butter and then stir until glossy. Let this mixture chill for 3-4 hours.
    5. Once chilled, use the hand mixer and beat the ganache until fluffy. Add this into a piping bag and pipe onto the cupcake. Sprinkle with confetti of your choice.

    My Tip:

    For eggless version- use 1/2 cup thick, fresh curd instead of eggs.
