Ingredients to make Granola Bars (Energy Bars)

  • Quick rolled oats 2 cups
  • 1.5 cups wheat flakes
  • 1/4 cup chopped almonds
  • 1/4 cups chopped walnuts
  • 1/4 cup chopped dates (without seeds)
  • 1/4 cups raisins (without seeds)
  • 4 tsp chia seeds
  • 4 tsp flax seeds
  • 4 tsp pumpkin seeds
  • 4 tsp sunflower seeds
  • 50 gram jaggery or honey
  • 2 tsp ghee or butter or peanut butter
  • 1 pinch salt
  • 1 pinch cardamom powder
  • 4 to 5 drops of vanilla essence

How to make Granola Bars (Energy Bars)

  1. First in a non stick wok, add 1 tsp ghee or butter or peanut butter and dry roast oats, wheat flakes, almonds and walnuts for 5 mins. You do not want to burn them. Just wait for a little color change and then take them out in another pan to cool down.
  2. Next dry roast all the seeds - flax seeds, chia seeds, sunflower seeds, pumpkin seeds. Stop once they start crackling. Add them to roasted oats pan to cool down.
  3. Now add another 1 tsp ghee in the same wok and add jaggery. Stir until it becomes saucy and brown. But do not burn it. Add cardamom powder and vanilla essence/extract in it.
  4. Pour this liquid in the wok where everything else is cooling down. Warning: Do Not Touch the mixture yet or else you will end up burning your fingers. Let it cool down completely.
  5. Now combine everything with your hands and try to make a stiff dough. Grease a tray and then spread this on it evenly. If you want a stiff and crunchy bite, bake it it in pre-heated oven on 350 degree for 10-15 mins. But I like it chewy so I just freezed them for 15 mins.
  6. Take out and then after a minute cut them in desired shape. Store in airtight container to enjoy for few weeks.

My Tip:

If your bars do not come stiff, use them as a mixture in warm milk to have in your breakfast.
