ABOUT Granola Bars (Energy Bars) RECIPE

It is a combination of healthy oats, some dry fruits and some seeds which is good for everyone. While kids will love to have it, even diabetic patients can enjoy it. It gives you instant energy.

Ingredients Serving: 6

  1. Quick rolled oats 2 cups
  2. 1.5 cups wheat flakes
  3. 1/4 cup chopped almonds
  4. 1/4 cups chopped walnuts
  5. 1/4 cup chopped dates (without seeds)
  6. 1/4 cups raisins (without seeds)
  7. 4 tsp chia seeds
  8. 4 tsp flax seeds
  9. 4 tsp pumpkin seeds
  10. 4 tsp sunflower seeds
  11. 50 gram jaggery or honey
  12. 2 tsp ghee or butter or peanut butter
  13. 1 pinch salt
  14. 1 pinch cardamom powder
  15. 4 to 5 drops of vanilla essence

Instructions

  1. First in a non stick wok, add 1 tsp ghee or butter or peanut butter and dry roast oats, wheat flakes, almonds and walnuts for 5 mins. You do not want to burn them. Just wait for a little color change and then take them out in another pan to cool down.
  2. Next dry roast all the seeds - flax seeds, chia seeds, sunflower seeds, pumpkin seeds. Stop once they start crackling. Add them to roasted oats pan to cool down.
  3. Now add another 1 tsp ghee in the same wok and add jaggery. Stir until it becomes saucy and brown. But do not burn it. Add cardamom powder and vanilla essence/extract in it.
  4. Pour this liquid in the wok where everything else is cooling down. Warning: Do Not Touch the mixture yet or else you will end up burning your fingers. Let it cool down completely.
  5. Now combine everything with your hands and try to make a stiff dough. Grease a tray and then spread this on it evenly. If you want a stiff and crunchy bite, bake it it in pre-heated oven on 350 degree for 10-15 mins. But I like it chewy so I just freezed them for 15 mins.
  6. Take out and then after a minute cut them in desired shape. Store in airtight container to enjoy for few weeks.
