Ingredients to make Deep Fried Tandoori Drummies

  • chicken drumsticks about 12 to 14
  • salt to taste
  • cornflour 2 to 3 tbsp
  • Tandoori masala 1 tbsp
  • Tikka masala 1 tbsp
  • red chilli powder a tbsp
  • Worcestershire sauce or soy sauce 2 tbsp
  • mustard paste a tbsp (optional)
  • Garam masala a tbsp
  • curd about 4 to 5 tbsp
  • Red food colour a pinch(optional)
  • ginger garlic paste 1 tbsp
  • For the barbecue effect, a small piece of charcoal with a tbsp of hot oil

How to make Deep Fried Tandoori Drummies

  1. Marinade the drumsticks with all the listed ingredients and refrigerate it overnight if possible.
  2. Otherwise it should be marinated atleast for over an hour.
  3. Heat the oil and fry these in batches of two or three occasionally turning over.
  4. It should be done on medium to high flame but under constant supervision.
  5. You have to be there until all get cooked.
  6. You can cover the wok or kadai and check on the flame from time to time.
  7. It should be cooked inside out and should be juicy and succulent.
  8. For the barbecue effect, just place a burning charcoal in a piece of aluminium foil and pour some hot oil on top. Cover it up immediately to let the smoke stay trapped inside. Leave it untouched for 10 mins.
  9. Serve them hot with any raita or curry.
  10. I usually serve them with ketchup as my kids love it this way.

My Tip:

Keep them marinated in the fridge overnight for juicy succulent drummies.
