Ingredients to make Lasooni Kheer/ Garlic Kheer

  • Milk - 3 cups
  • garlic Cloves - 10 - 15
  • Khoya- 50 gms
  • sugar - 1/2 - 3/4 th cup
  • rice - 1 tbsp
  • vinegar - 1/4 th tsp
  • cardamom pd.- 1/2 tsp

How to make Lasooni Kheer/ Garlic Kheer

  1. In a heavy bottomed pan boil milk,add the soaked rice and cook in medium flame. Peel the garlic cloves and cut into thin slices. Bring 1 cup water to boil,add 1/4 th tsp vinegar to it,now add the garlic cloves to it,boil for 2 mins,drain all the water.
  2. Again boil the same amt.of water,add the remaining vinegar to it,finally add the garlic cloves,boil for 2 mins and drain the water..Finally take plain water(same amt.) cook the garlic cloves again for 2 mins ,drain the water.
  3. Now rinse the garlic well in water about 3 -4 times to remove all traces of vinegar ,strain and keep aside.This step is essential to remove the strong aroma of garlic .
  4. Meanwhile watch the milk ,rice mixture,when it reduces to almost half the amt. and the rice is almost done,add sugar, khoya,the garlic cloves and finally cardamom pd..Cook for some more time and when done,remove from flame,garnish with chopped nut and serve hot.
  5. Your lasooni kheer is ready to add warmth to your life just like the festival of lights

My Tip:

The garlic t/t with vinegar is imp.It removes the strong aroma of garlic but retains its subtle flavour.Last step of rinsing in plain water is imp.else even a trace of vinegar can curdle the milk.
