Ingredients Serving: 3

  1. 1 bowl of Eggplant, mashed
  2. 6 tortillas
  3. 1/2 cup grated cheese
  4. 1/2 cup tahini paste or peanut butter
  5. Sour curd or Mint chutney mixed with curd


  1. For the eggplant mash, roast the eggplant and scoop out the pulp.
  2. Take some olive oil, saute the finely chopped garlic and green chillies, then add the pulp and fry it.
  3. Next add in the garam masala and chaat masala, a tablespoon of thick curd and fry it till the raw smell fades away. Then add the coriander.
  4. To assemble the tortilla wraps, take a wrap and spread some tahini paste or peanut butter on it. Next top it with a layer of the eggplant mash, grated cheese. Then fold it in a semi-circle shape and grill it.
  5. Cut it into 2 and serve it immediately! (it's a great way to make kids eat veggies)
