Chicken Noodle Soup

Ingredients to make Chicken Noodle Soup

  • Boneless and Skinless chicken Breasts 500 grams
  • cloves 10-12
  • ginger 2 inch piece
  • Rice vinegar (or lime juice) 1 tablespoon
  • Soy sauce 1 tablespoon
  • Schezwan chilli sauce (or any hot sauce) 1 tablespoon
  • Crushed black pepper or black pepper powder 1 teaspoon
  • Few chopped green onions
  • Chopped onion 1/2 cup
  • A bunch of uncooked noodles of your choice
  • salt to taste
  • water 5 cups

How to make Chicken Noodle Soup

  1. Wash the chicken well with water. Then drain it.
  2. In a medium saucepan, fill in water, then add in the cloves and chicken. Cook the chicken on a medium-high heat until it is properly cooked. This will take about 10 minutes.
  3. Throw away the cloves (you can keep them in the broth if you like, but I am not comfortable with cloves while eating my soup) and take out the chicken. Keep this broth to prepare the soup.
  4. Let the chicken cool down for some time, then shred it using your hands or a fork.
  5. In the prepared chicken broth, add in the chopped ginger, chopped onions and the shredded chicken. Keep it on a high heat and let it come to a boil.
  6. Now add in the crushed black pepper, vinegar, schezwan chilli sauce and soy sauce. Mix it well together.
  7. Simmer for 10 minutes on a medium heat. Adjust the salt consistency as per taste, then add in the chopped green onions and noodles.
  8. Mix and continue to cook for a few more seconds. (The noodles which I used are very delicate and gets cooked within few seconds.)
  9. Remove it from the heat. Enjoy this hot and sour homemade chicken noodle soup.
