Pistachio Coconut Barfi

Ingredients to make Pistachio Coconut Barfi

  • Sweetened condensed milk 2 cups
  • Unsalted pistachios 3/4 cup
  • dessicated coconut 1/2 cup
  • cardamom powder 1/4 teaspoon

How to make Pistachio Coconut Barfi

  1. In a non-stick pan, add unsalted pistachios and dry roast for 5-7 min until the nutty aroma is released.
  2. Coarsely grind the pistachios by giving a spin or two or pound- them coarsely and place them aside.
  3. To the same pan add condensed milk, coconut powder, cardamom powder and coarsely ground pistachios. Mix well and stir continuously.
  4. After 8-12 min, the condensed milk would leave the pan and becomes thick.
  5. Take a small amount of the mixture and try to roll it between your palms. If it forms a semi solid ball, turn off the heat.
  6. Wet your palms and roll the mixture into lemon size balls.
  7. Garnish by placing a pistachio on the barfi. Or the barfi balls can also be dusted with coconut powder.
