250 grams jaggery /Gud
500 grams Whole Wheat flour(1/2cup white flour optional)
150 grams Chana dal
1 tbsp fennel (saunf) powder
1/2 tsp ginger powder
1/2 tsp nutmeg powder
5-6 green cardamom crushed
2 -3 tablespoons pure ghee
2-3 tablespoons oil
1/2 tsp salt
Instructions
Wash Chana Dal well. Pressure cook for 6-8 whistles
Remove cooked daal , strain well and keep aside
Now take pure ghee in a pan or kadai heat it and add the crushed Cardamom seeds.
Add nutmeg and fennel powder
Add ginger powder and mix well
Saute for 2 minutes and add the Jaggery
Add chana Dal to the mixture
Mash all these together with potato masher or with hand
Now knead the flour well adding salt to taste
Knead the flour with ghee soft and light , add water as required .
Keep dough aside
Now make 6-8 portions of the jaggery chana daal mix , this is the Puran
Start rolling the dough into a small poori /Poli
Place one portion of Puran mix on the poori ,close wrapping up the puran in it
Dust little flour and roll lightly
Do the same for each poli
Heat Tava on low flame and shallow fry these Puran Poli one by one with ghee or oil as per choice
Serve hot
