Gud Papdi/Gol Papdi

Ingredients to make Gud Papdi/Gol Papdi

  • 2 cups wheat flour
  • 1 cup ghee + 1 tbsp for greasing
  • 1 cup grated jaggery
  • Pinch cardamom powder
  • 1/2 cup assorted chopped toasted nuts (almonds, cashews & pistachios)

How to make Gud Papdi/Gol Papdi

  1. In a thick bottom kadhai melt the ghee, when the ghee just about melts , add in the wheat flour. Mix well, keep stirring on low flame till the wheat flour gives out a nice aroma.
  2. Be careful not to burn the flour, the gas should be on low flame all through.
  3. When the flour turns golden & a nice aroma wafts, switch off the flame.
  4. Let the mixture cool till about a little more hot than luke warm.
  5. Now add the grated jaggery & cardamom powder & mix swiftly. Do not switch on the gas. The jaggery mixing is to be done without any reheating.
  6. Transfer the mixture on a greased plate, press well with fingers or the backside of a ladle to even it.
  7. Sprinkle the toasted nuts, press them with a spoon so they get embedded. Cut into desired shapes -squares or diamonds when still warm.
  8. After it cools completely take the pieces off with the help of your knife

My Tip:

Do not alter the measurements, the ratio between the ingredients needs to be the same if you increase or decrease quantities. The barfi might feel soft when warm, but will solidify eventually.
