Crispy Calamari with Chilli- Garlic Tomato Sauce

Ingredients to make Crispy Calamari with Chilli- Garlic Tomato Sauce

  • Calamari or squids , 1 kg. Cleaned and cut into rings
  • 1 cup flour, refined
  • salt to taste
  • pepper , 1/2 tsp
  • Juice of 1 lime.
  • oil for frying
  • For Sauce
  • 1 tsp chilli flakes , less if you like
  • 8- 10 garlic pods
  • 3 plump red tomatoes
  • 2 tblsp oil
  • salt
  • pepper

How to make Crispy Calamari with Chilli- Garlic Tomato Sauce

  1. Clean and wash calamari rings. Season with salt , pepper and lime juice.
  2. In a kadhai or wok , pour oil until it's half. Place on medium heat
  3. Toss a few calamari rings at a time into the flour. And gently drop them in moderately hot oil.
  4. Fry until it reaches a nice golden brown colour .
  5. Drain on absorbent kitchen towel. Serve hot with a wedge of lime and chilly -garlic tomato sauce.
  6. For the sauce. Chop tomatoes. Mince garlic. Keep aside.
  7. In a small pan , heat oil. Saute minced garlic until raw flavour is gone. Do not brown.
  8. Add chilly flakes and fry for 1 min. Quickly add chopped tomatoes. Season. Simmer for a few minutes. Serve along with crispy calamari.

My Tip:

Sauce can be prepared a day in advance and served at room temperature. Make sure to add calamari in the flour in small batches. Dust it well before frying as it may cause the burnt flour to settle at the bottom of the kadhai. You can also make a mix of calamari , prawns ( cut into half lengthwise ) and strips of fish ( cut about the same size as prawns and calamari).
