Ingredients to make Instant suji handvo

  • Suji : 2 cup
  • Little sour curd : 1-1/2 cup
  • Milk (cold) : 1 cup
  • salt to taste
  • red chilli powder to taste
  • turmeric powder : 1/2 tsp
  • capsicum : 1 chopped finely
  • onion : 1 chopped finely
  • carrots : 1/2 cup grated
  • water : 1/4 cup or as needed
  • mustard seeds as needed
  • White sesame seeds as needed
  • baking soda : 1-1/2 tsp
  • oil as needed

How to make Instant suji handvo

  1. In a bowl mix suji, salt, red chilli powder and turmeric powder.
  2. Add curd and milk and water. Mix it to a smooth thick batter with no lumps. If needed only then add water.
  3. Add carrots, capsicum and onion. Mix well. Keep aside for 30 min.
  4. Now before cooking handvo add baking soda. Mix well. Heat heavy bottom kadhai or pan. Slow the flame. Add 2 tbsp oil, few mustard seeds and few sesame seeds. Let it splutter for a min.
  5. Pour a ladlefull of batter in the kardai. Cover it with a lid and let it cook on slow flame for few min. (It will puff up like a cake.)
  6. After 3-4 mins remove the lid. Top of the handvo would have dried up and the base will turn crispy golden brown. Turn it upside down.
  7. Again cover and cook on slow for 2-3 min. Remove the lid and cook on high for 2 min. This side will also turn crispy golden.
  8. Make all the handvo like this. First put oil, then mustard seeds and sesame seeds. Then batter.
  9. Transfer it to a serving plate and serve with ketchup or chutney.

My Tip:

Add baking soda before cooking. I have added only 1/4 cup water.
