Ingredients to make Hariyali Kachodi

  • For covering
  • maida 1 cup
  • spinach leaves 1 cup
  • salt as per taste
  • Ajwain seeds 1/3 teaspoon
  • oil for dough 1/4 cup
  • oil for frying 2 cup or more
  • For stuffing
  • Green peas 2 cups
  • oil 2 teaspoons
  • cumin seeds 1/2 teaspoons
  • Green chilli 2 chopped
  • ginger 1 teaspoon crushed
  • salt as per taste
  • turmeric powder 1/4 teaspoon
  • coriander powder 1 teaspoon
  • Red chilli powder 1 teaspoon
  • Dry mango powder 1 teaspoon
  • fennel seeds 1 teaspoon
  • Whole coriander seeds 1 teaspoon
  • Green coriander leaves 2 tablspoons chopped

How to make Hariyali Kachodi

  1. Wash spinach leaves, and blanch them. grind leaves in to a fine paste.
  2. Sieve maida, add ajwain, 1/4 cup oil and salt, mix properly with palm.
  3. Make a soft dough with help of spinach puree. Let it rest for 30 minutes.
  4. Heat oil for stuffing mixture in a wok. Add cumin, chopped green chilli and ginger.
  5. Add peas, add all spices and salt. Mix well . Cover it till done or 2 to 3 minutes.
  6. Remove cover and fry till water absorbs. Switch off gas.
  7. Let it cool for 20 minutes.
  8. Grind peas coarsely.
  9. Crush fennel and coriander seeds.
  10. Add this to ground peas mixture.
  11. Add green coriander in stuffing mixture.
  12. Take dough and spread with palm.
  13. Fill with 1 tablespoon filling mixture.
  14. Cover from all sides. Make all kachori like this.
  15. Heat oil in a wok. Add 3 to 4 kachoris in a time.
  16. Fry kachoris at low flame till golden and crispy.
  17. Remove kachoris from oil and keep on kitchen towel.
  18. Serve hot kachoris with green chutney and raita.
