Ingredients to make Okra Fry / Bhindi Kurkure

  • LadysFinger - 10
  • red chilli powder - 1 tsp
  • coriander powder - 1 tsp
  • gram flour/besan - 1 tbsp
  • all purpose flour/maida - 1 tbsp
  • white sesame seeds - 1 tsp (optional)
  • salt as needed

How to make Okra Fry / Bhindi Kurkure

  1. Wash the ladysfinger and pat it dry.Cut into roundlets.
  2. Add salt,red chilli powder,coriander powder,gramflour and all purpose flour to the ladysfinger and mix it well.
  3. Sprinkle the sesame seeds and drops of water for the sesame seeds to stick on the vegetable.
  4. Give a gentle mix.
  5. Heat oil in a pan.Add in batches when the oil gets hot.
  6. Drain and blot with tissue paper.
  7. Serve hot with rice, roti or a snack by itself.

My Tip:

1.Always chop ladysfinger after it gets dried.Else it will get slimy. 2.Always fry the ladysfinger in hot oil,else it turns soggy drinking up the oil.

In step 2, do we need to make a batter adding water, and then dip bhindi in that or it should be dry?
