Shahi Dum Aloo

Ingredients to make Shahi Dum Aloo

  • Baby potatoes 12 to 15
  • onion 2 big size
  • tomato 1 big size
  • ginger chilli paste 1 tsp
  • curd 1 & 1/2 cup
  • Red chilli powder 1 tsp
  • turmeric 1/2 tsp
  • Coariander powder 1 tsp
  • hing 1/4 tsp
  • salt as per taste
  • water 1& 1/2 cup
  • Green cardamom 2
  • Laung 2
  • tej patta 2
  • Garam masala 1 spn
  • oil as required

How to make Shahi Dum Aloo

  1. First boil the potatoes in pressure cooker for 2 whistles only
  2. Peel the potato, heat oil in a pan for deep frying. Once the oil is hot, add the potatoes and sprinkle salt. Fry till light golden brown. Let it cool
  3. In the same pan keep 1 or 2 tsp oil, add potatoes,very small quantity of red chili, turmeric and dhania powder and salt and saute for 2 mins. Switch off the flame.
  4. Now in a pan put oil, add roughly chopped onion, saute till light brown, add ginger chilli paste and mix, add roughly chopped tomatoes, all spices and mix well. Cook for 4 to 5 minutes. Turn off the flame and let it cool
  5. Now in a jar add this mixture and curd, blend it and make a healthy paste. Now in the same pan add 2 tsp of oil, add the jeera, cardamom,laung and tej patta, puree and cook for 2 to 3 mins. Add cashew powder, malai and mix well Add potatoes and mix it. Simmer the flame and cook for 2 to 3 mins and add butter on the top
  6. Garnish with coriander leaves. Serve with rice, Naan or roti

My Tip:

Always take tomatoes half the quantity of onions for a better taste
