A vegan vegetable soup that is prepared during a particular festival in Odisha !

Ingredients Serving: 3

  1. 1/2 cup radish (cut into circles)
  2. 1/4 cup sweet potato (cut into circles)
  3. 1/4 cup Taro/Arbi (cut into circles)
  4. 1/4 cup banana stem (cut into small pieces)
  5. 1 green Chili
  6. 1 dry red Chili
  7. 1 sprig Curry leaves
  8. 1/2 tsp cumin seeds
  9. 1/2 tsp ginger juliennes (my addition)
  10. 1 tbsp jaggery
  11. 1 lemon sized ball of tamarind
  12. pinch of Aafoetida
  13. salt to taste
  14. 1/5 tsp turmeric powder
  15. 1/2 tsp refined Oil/ghee


  1. Add salt to banana stem pieces and leave for 20 minutes. Gently squeeze out the water and set aside.
  2. Soak tamarind in ½ cup warm water for 15 minutes and mash with your hand. Strain and discard the pulp.
  3. In a pressure cooker, add all the vegetables along with 4 cups of water, green chili, turmeric and salt Cook for 2 whistles and turn off the flame.
  4. When the steam settles add jaggery and tamarind pulp. Cook for 6-7 minutes on low flame till desired consistency.
  5. In a small pan heat oil and drop in cumin seeds, asafoetida, broken red chili and curry leaves.
  6. Once cumin starts to splutter, pour this tempering over above contents in pressure cooker. Bring it to boil for 1 minute and turn off the flame.
