Blanched flat beans and potatoes mixed with yellow mustard and garlic, gives a very different taste and flavour. I learnt it from my mom-in-law. :blush:

Ingredients Serving: 6

  1. Flat beans :250gms
  2. Small potatoes 6-8
  3. Yellow mustard 3 tbsp
  4. Garlic 1 medium pod
  5. Whole red chilies 2-3
  6. Turmeric powder 1tsp
  7. Mustard oil 3/4 cup
  8. Mustard powder 1 tsp
  9. Salt to taste

Instructions

  1. Wash and trim the beans.
  2. Wash the potatoes.
  3. Cut the beans into pieces.
  4. Boil enough water in a big pan, once water starts boiling, put potatoes and boil for 10 minutes or till the potatoes are half cooked.
  5. Add beans and bring to boil.
  6. Turn off the gas. And take out the vegetables on a kitchen towel.
  7. Put these in sun for 10-15 minutes or dry under the fan for half an hour.
  8. Now grind yellow mustard, whole red chilies, garlic and turmeric to a fine paste.
  9. Add the paste to blanched vegetables, add salt and mustard oil and mix well.
  10. Add mustard powder and mix well. Now transfer the pickle to a glass jar. Your pickle is ready to eat. It goes well with stuffed parathas, puri or any North Indian food you can serve this pickle.
