A very differnt but amazing flavour chocolate and rosemarry ice cream from the book 70 best chocolate recipe by hamlyn has become a hit in my family.

Ingredients Serving: 4

  1. 600g double cream
  2. 150 ml milk
  3. 1 tea spoon vanilla essence
  4. 4 rosemary springs
  5. 5egg yolk
  6. 125g castor sugar
  7. 125g plain dark chocolate grated


  1. Gently heat the cream ,milk,vanilla seeds and rosemary springs in a pan until almost boiling. Remove from the heat and leave to infuse for 10minutes. pick out the rosemary spring and reserve.
  2. Beat the egg yolk and sugar until pale and then carefully beat in the cream mixture. strain back into the saucepan and heat gently ,stirring constantly, until the custard thicknes enough to coat the back of spoon. Do not allow the custard to boil.
  3. Remove the custard from the heat and immediately stir in the chocolate ,continuously to stir untill it is partially melted( let some chunks unmelted). Transfer to a plastic container, add the rosemary springs and leave untill completely cold. Discard the rosemary.
  4. Freeze the ice cream for 24 hours .. remove from freezer 10 minutes before serving to soften slightly . Garnish with rosemary spring.
