ABOUT Green Gujarat ( Ubadiyu) RECIPE

All winter fresh vegetables from Gujarat with simple masala. It is a type of Undhiyu.

Ingredients Serving: 6

  1. Medium sized potatoes 5
  2. Medium sized brinjals 4
  3. Raw banana 1
  4. Sweet potato 2
  5. Purple sweet potato (Kandh) 1
  6. Surati papadi 150 gm
  7. Green Toor beans 100 gm
  8. Normal papadi 100 gm
  9. Green Garlic with grass 100 gm
  10. Chopped coriander 100 gm
  11. Grinded fresh coconut 1/2 cup
  12. Chilli, ginger and garlic paste 3 tbs
  13. Turmeric 1 tsp
  14. Salt
  15. For methi muthiya
  16. Chopped fresh methi leaves 100 gm
  17. Wheat flour (thick) 100 gm
  18. Besan flour 50 gm
  19. Red chilli powder 2 tsp
  20. Turmeric powder 1 tsp
  21. Salt
  22. Oil 2 tsp
  23. oil to fry

Instructions

  1. Wash all the vegetables. Keep the skin of the potatoe and cut in four part.
  2. Peel the skin of banana and cut in 1" size of dice.
  3. Cut sweet potatoes, purple sweet potato (kanda) in big size. Give four cuts onthe brinjals. Remove beans from toor. Clear both papadi.
  4. Mix all methi muthiya ingredients add water as required. The dough should be stiff. Make round balls and fry it.
  5. Now fry all vegetables one by on for just 2 minutes even Toor beans and both papadis.
  6. Now take 3 tbs of the oil from the fried kadai for tadaka as it has all the flavours of vegetables. Add 1 tsp of ajawain seeds. When the seeds starts cracking add chilli garlic ginger paste and turmeric. Cook it for 1 minute.
  7. Add all fried vegetables stir with soft hand.
  8. Mix grind coconut, chopped coriander and chopped green garlic with grass add salt mix it well. Add this masala in the vegetables mix with spachula add 1/2 cup of water in vegetables cover it with led. Cook for 15 minutes or until all vegetables are cook well. At the end add methi muthiya.
  9. Serve it with mint coriander chutney. U can also enjoy it with puri and shreekand.
