Chicken Balti Masala

Ingredients to make Chicken Balti Masala

  • 1 whole chicken cut in pieces
  • 1" cinnamon stick
  • 1 black cardamom
  • 3 green cardamoms
  • 3 cloves
  • 2 bay leaves
  • 2 tbsp ginger-garlic paste
  • 3 tsp + 1 tsp Kashmiri red chili powder
  • 2 tsp balti garam masala
  • 1 tsp meat masala
  • 4 tbsp thick yogurt
  • salt to taste
  • 4 tbsp oil
  • 1 tsp kasoori methi powder
  • Balti Garam masala:-
  • 2 tsp coriander seeds
  • 2 fennel seeds
  • 1 Tsp cumin seed
  • 1 tsp black mustard seeds
  • 1/2 tsp cloves
  • 1/2 tsp nigella seeds (kalonji)
  • 3 bay leave
  • 2 cinnamon sticks broken
  • 2 tsp red chili flakes
  • 1/2 tsp ground nutmeg

How to make Chicken Balti Masala

  1. Dry roast whole spices mentioned under Balti garam masala except chili flakes and nutmeg till aromatic. Add chili flakes and nutmeg for final roasting time. Grind to fine powder.
  2. Clean, wash and drain chicken.
  3. Marinate chicken with all ingredients except whole spices and oil for an hour or more.
  4. Heat oil in wok. Add whole spices and 1 tsp red chili powder. Sauté few seconds and immediately add chicken.
  5. Stir chicken in oil well and cover with lid. Cook chicken till its tender.
  6. Remove lid and let all the water evaporate so only thick masala is left behind.
  7. Finally add kasoori methi powder and give it a stir.
  8. Remove to a serving dish and serve with naan/paratha/steamed rice.
