Ingredients Serving: 6

  1. Rice Flour -1 cup
  2. Coconut powder - 1/2 cup
  3. Sugar, powdered - 2/3 cup
  4. Eggs - 2
  5. Butter - 2 tbsp
  6. Milk - 1 cup
  7. Vanilla - 1 tsp
  8. Baking powder - 1 tsp
  9. Baking soda - 1 tsp
  10. Pinch of salt

Instructions

  1. Sift flour, salt, baking powder and soda and keep aside
  2. Beat eggs with sugar until frothy and double in quantity
  3. Add butter and beat once more, until incorporated
  4. Add in vanilla and give it a mix
  5. Now food in the dry ingredients and coconut powder and mix to incorporate
  6. Add milk and give it a final mix
  7. The batter will be runny and thin
  8. Grease muffin moulds with coconut oil
  9. Pour in the batter
  10. Bake in a pre- heated oven at 180 degrees Celsius for 15-20 minutes
  11. Check with a toothpick, if not done, bake for some more time
