Turmeric and Pumpkin Soup

Ingredients to make Turmeric and Pumpkin Soup

  • 2 tbsp ghee/oil
  • 2 medium onions, chopped
  • 2 carrots, diced
  • 2-3 garlic cloves, crushed
  • 1 tsp cumin powder
  • 1 tsp black pepper powder
  • 2 tbsp fresh turmeric, grated
  • 1 tbsp ginger, grated
  • 1 tsp salt or as per taste
  • 2 cups pumpkin, diced
  • 1 Cup coconut Milk
  • water or vegetable stock, as required
  • 1 tbsp toasted pumpkin seeds, to garnish
  • 1/2 tsp red chilli flakes, to garnish
  • some parsley, to garnish

How to make Turmeric and Pumpkin Soup

  1. Heat a large and deep pan and add ghee in it.
  2. Add onion and saute till pink.
  3. Add garlic, ginger. Add cumin powder and saute lightly.
  4. Season with salt and pepper.
  5. Add the diced carrots, turmeric and pumpkin. Saute for 10-12 minutes until the pumpkin and carrot begin to soften and caramelise on the edges.
  6. Add the coconut milk and vegetable, ensure that the vegetables are completely submerged.
  7. Cook it on medium/low heat for 20 minutes.
  8. Once the pumpkin and carrots are soft, blend them using a hand blender until smooth.
  9. Adjust the thickness, add more water/stock, if required.
  10. Garnish with toasted pumpkin seeds, chilli flakes and some parsley.

My Tip:

Best had piping hot! Serve with buttered garlic bread.
