ABOUT Moti Kofta Pulao RECIPE

This is a delicious and rich pulao to be served in the parties.

Ingredients Serving: 4

  1. 1 cup Basmati Rice
  2. 1/4 cup onion sliced
  3. 2 tbsp curd
  4. 1 tsp Ginger garlic paste
  5. 1/2 tsp jeera [cumin seeds]
  6. 1 bay leaf
  7. 1 big Elachi (black cardomom)
  8. 1 small stick cinnamon
  9. 1 green chilly slit into two
  10. 1/2 tsp biryani/pulao masala
  11. 1 tsp mint leaves
  12. 1-2 drops liquid yellow food colour
  13. Cashew nuts & Raisins for garnishing
  14. Coriander leaves for garnishing
  15. For the Moti :
  16. 1 cup grated paneer
  17. 1-2tsp cornflour
  18. Salt to taste
  19. Oil for frying
  20. Sliver warq

Instructions

  1. Wash and Soak rice for sometime
  2. Take grated paneer in a bowl, add salt n pepper. Add cornflour for binding and make small balls ( moti size) of the mixture
  3. Now fry these motis into hot oil and drain on tissue. Cover these motis with sliver warq and keep aside
  4. Heat oil in a pan, add whole garam masala, jeera when it splutters, add onion and fry for a min ,add ginger garlic paste and again fry for a min , add washed rice, curd, green chilly, salt, now saute it well.
  5. Add 2 cups of water and allow the rice to cook, when the water almost dries up , lower the flame, sprinkle some biryani masala, spread some mint leaves and also 2-3 drops of liquid yellow food colour. Cover the lid and cook for 4-5 mins on lower flame
  6. Now serve this rice in a rice platter, place motis on the top, add cashew and raisins and finally garnish with coriander leaves

This is a very old traditional recipe! Looks absolutely superb..
