Ingredients to make Roti cutlets

  • Roti -- 4
  • oil for shallow fry
  • Boiled potato - 1 big
  • Finely chopped cabbage
  • Finely chopped capsicum
  • Finely chopped small sized beetroot
  • Rava 1 cup
  • til 2 tablespoons
  • Finely chopped green chillies (can add red chilli powder in substitute)
  • salt for taste
  • Chat masala -1 tablespoon
  • Finely chopped onions /palak(spinach) -- (optional)

How to make Roti cutlets

  1. Grind the roti/chapatis into mixer grinder. It should not be crushed into fine powder. Let it be grainy.
  2. Now mix the mashed potatoes, cabbage, capsicum, beetroot, optional veggies, Salt, 1 tablespoon Rava , green chillies/red chillies powder, chat masala, grinded roti and knead them into a dough like formation.
  3. Keep the dough aside for 5 mins
  4. Now, make different shapes of cutlets from this dough. For Valentine's Special, you can make heart shaped also. The beetroot will give you red colored heart-cutlets .
  5. Mix rest of the Rava with till and press the cutlets on this mixture, from both the sides. You can prepare few cutlets and keep them aside.
  6. Take a nonstick pan/kadhai and put 3 tablespoons oil into it . You can add oil in quantity as per your wish also. Please keep in mind we are going to shallow try these cutlets. Place the pieces in the pan very carefully. They tend to break because they are very Soft.
  7. After 3 mins turn the sides. The upper side now will be little dark brown and crisp. .
  8. Keep frying till it be comes dark and crisp from both the sides. It will not take more than 5 mins :) you can soak excess oil, if any, by directly placing the cutlets on tissue paper before serving them hot.

My Tip:

1. You can use breadcrumbs powder in place of Rava. 2. You can make it more healthier by adding lots of other veggies like green peas, coriander, cauliflower, methi, etc. 3. You can also add kismis,kaju for dryfruit flavour. 4. For chatpata flavour, you can add pav bhaji masala, 1tbsp lemon juice, etc according to your taste style. 5. Make different shapes like outline of mickey mouse face, teddy bear, etc. 6. Make them medium size for better frying, not very thick and not very thin. 7. For a chinese touch, you can also add Soya sauce while kneading the dough.
