Red Velvet Cake

Ingredients to make Red Velvet Cake

  • Maida or all purpose flour - 1 cup
  • butter - 50 gms at room temperature
  • sugar - ½ cup
  • Vanilla essence - 1 tsp
  • curd - 3 tbsp
  • Milk - ⅓ cup (80 ml)
  • Red food colour - 1 tsp
  • Cocoa powder - 1 tsp
  • Baking powder - 1 tsp
  • baking soda - ¼ tsp
  • For Frosting:
  • butter - 1 cup at room temperature
  • Confectioners sugar - 1 cup
  • Vanilla essence - 1 tsp

How to make Red Velvet Cake

  1. For Frosting: Beat together the butter with sugar and vanilla extract for 5-10 minutes to make a creamy mixture. Keep it chilled until you need to use it.
  2. In a mixing bowl beat together the sugar and curd and stir until the mixture is smooth and creamy. Add butter, vanilla essence, milk, food colour and mix well.
  3. Seive in the flour, cocoa powder, baking powder, baking soda and mix gently for a smooth and lumps free batter but do not over mix the batter.
  4. Grease the cake pan. Preheat the oven @180° for 10 mins.
  5. Pour the batter into the greased pan. Tap the pan to even out the batter and bake at 180° for 30-35 minutes. Mine took exactly 30 mins. Let the cake cool completely.
  6. From the batter I have taken out batter for 2 cupcakes for decorating the cake. Baked in microwave for 1½ mins in full power. Crumbled it and keep aside.
  7. Frosting and decorating the cake: Take the completely cool cake. Cut the cake into 2 layers evenly.
  8. Apply frosting to one of the layer and add the next layer.
  9. Cover the entire cake including the sides with frosting. Cover the sides with red cake crumbs and also add some on top and decorate as you like.
  10. Chill for at least 30 minutes. Slice and serve. You can store it in the refrigerator.
