Red Velvet Rice Pudding

Ingredients to make Red Velvet Rice Pudding

  • Basmati rice. 12. Cup
  • water. 1 12 cups
  • sugar. 34 cup
  • Unsweetened cocoa
  • powder. 1 12 tbsp
  • Custard Powder. 1 tbsp
  • Beetroot chopped. 1 cup
  • Beetroot julienned. 12 cup
  • Pista, almond. 1 tbsp heaped
  • Kishmish. 2 tsp
  • butter. 2 tbsp
  • elaichi powder. 1 tsp

How to make Red Velvet Rice Pudding

  1. Heat 1tbsp butter, sauté basmati rice till warm
  2. Add water (3 times), a pinch of salt, pressure cook to mashable consistency
  3. Meanwhile, heat the same pan, add 1 tsp butter, sauté nuts and kishmish.
  4. Remove and keep aside.
  5. Add 1 tsp butter, sauté julienned beetroot till 'al dente'
  6. Meanwhile heat water in a pan, add chopped beetroot, cook till very soft.
  7. Drain water and reserve. Cool and grind beetroots to a very smooth paste
  8. Take a bowl, add cocoa powder and custard powder, whisk.
  9. Slowly add 2 tbsp milk at room temperature, stirring continuously till well dissolved. to make the red Velvet sauce.
  10. Mash rice with back of a spoon, stir in 12c milk, whisking gently till rice lumps loosen and come together with milk.
  11. Return to heat, cook till it is a homogenous mixture, add sugar.
  12. Cook till sugar dissolves, stirring all the while.
  13. Add in red Velvet sauce, bring to boil till thick, using the beetroot water to loosen( if very thick) or to add color.
  14. Put off gas. Add elaichi powder.
  15. Garnish with sautéed nuts, kishmish and beetroot juliens.
