Almond Bread Pudding

Ingredients to make Almond Bread Pudding

  • 9 eggs
  • kg sugar
  • kg refined flour
  • kg butter
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 100 gm almonds roughly chopped
  • For the caramel:
  • 800 gm milk maid
  • butter 100 gm
  • Brown sugar 100 gm

How to make Almond Bread Pudding

  1. Beat egg in large mixing bowl for 4 minutes with hand blender. Add sugar and continue beating for another 4-5 minutes until light and fluffy. Add vanilla and stir on low until just combined.
  2. In a separate bowl sift together dry ingredients. Add to eggs & sugar on low speed until just combined.
  3. Pour into greased and floured cake mould.
  4. Bake at 325 degree Fahrenheit until a tooth pick inserted come out clean. Remove from oven and let it cool down completely. Then cut it into portions.
  5. Melt equal weight of butter and brown sugar in a pan and simmer on a low heat until a two become smooth liquid.
  6. Add condensed milk and raise the temperature very gently until it starts to simmer. Keep the temperature low and stir continuously until brown.
  7. Serve the bread pudding warm with caramel sauce & a scoop of fig ice-cream.
