Ingredients Serving: 4

  1. Arbi- 250 gms. Boiled
  2. Oil- 3 tablespoon
  3. Onion- 1
  4. Green Chillies- 2-3 chopped
  5. Ginger Garlic thinly chopped- 1 tablespoon
  6. Amchur powder- 3 tablespoon
  7. Turmeric Powder- 1/2 teaspoon
  8. Red chilli powder- 1 teaspoon
  9. Tomato- 2 chopped
  10. Pinch of hing
  11. 1 teaspoon Ajwain
  12. Salt to taste

Instructions

  1. Boiled the Arbi.
  2. Peel the boiled Arbi.
  3. Cut Arbi into big pieces
  4. Peel and slice onions, Chop tomatoes choped green chilies and also chop ginger and garlic.
  5. Heat oil in a pan and add carom seeds and hing. Add onions and saute till golden brown.
  6. Add chopped chillies, ginger garlic and sauté for 2 minutes.
  7. Add turmeric, red chilli powder and sauté for 3-4 minutes on low heat.
  8. Add chopped tomatoes and cook till the tomatoes are completely mashed.
  9. Add the arbi and cook for 2 minutes
  10. Add one cup of water and salt, cook for 2 minutes. Add amchur powder. Cover and simmer for 2 minutes.
  11. Your Arbi Salan is ready to serve.
