Thandai Cupcakes

Ingredients to make Thandai Cupcakes

  • all purpose flour / Maida 1 cup
  • Powdered sugar 1 cup (or according to your taste)
  • Baking powder 1- 1/2 tsp
  • baking soda 1 Tsp
  • Thick curd 3/4 cup or 8 tbsp
  • Veg oil / ghee / butter 1/4 cup
  • Rose water 1/2 tsp
  • Thandai masala 2 tbsp (cardamom powder, fennel seeds, almond powder, peppercorn powder, poppy seeds,cashew powder )
  • Chopped nuts 4 tbsp
  • Dried rose petals 1 tbsp
  • Milk 3-4 tbsp
  • salt 1 pinch
  • saffron strands soaked in milk

How to make Thandai Cupcakes

  1. Sieve maida, baking powder, baking soda and salt 3-4 times
  2. Grease the cupcake liners or silicone muffins with butter.
  3. Preheat oven at 180 C for 10 minutes
  4. In a bowl beat butter/oil/ ghee and powdered sugar till creamy and fluffy .
  5. Add curd, cardamom powder and rose water and beat for 10 seconds.
  6. Add thandai powder and beat for few seconds
  7. Add crushed rose petals sieved flour to the creamed mixture and fold it gently with a spatula.
  8. Add flour coated nuts and saffron infused milk
  9. If required add warm milk to the batter and fold it.
  10. Pour the batter into cupcake liners or ramekins keep the cuppies in a tray .
  11. Bake them at 180 C for 25-30 minutes for 20 -25 minutes
  12. When cupcakes are baked cool on the wire rack for 10 minutes
  13. Demould cupcakes and cool them completely on wire rack for 15 minutes
  14. Then garnish with dried rose petals and thandai powder over it. Enjoy your Holi with thandai flavoured cupcakes.

My Tip:

Add rose essence if you do not have rose petals
