Kand Puri (Purple Yam Fritters)

Ingredients to make Kand Puri (Purple Yam Fritters)

  • Purple Yam (Kand) - 200 gms
  • gram flour (Besan) - 2 cups
  • ginger - Garlic paste- 1 tbsp
  • Green chilli paste- 1 tbsp
  • turmeric powder- 1/4 tsp
  • Soda bi-carbonate - 1 pinch
  • oil (Hot) - 2 tbsp
  • salt - to taste
  • water- As required to maitain batter consistency
  • Black peppercorns - 1 tbsp
  • cumin seeds (Jeera) - 1 tbsp
  • oil - for frying

How to make Kand Puri (Purple Yam Fritters)

  1. 1) For batter- Mix Besan, turmeric powder, ginger-garlic paste, green chilli paste, salt and water and mix well to form a thick consistency batter.
  2. 2) Peel purple yam and cut it into thick slices
  3. 3) Coarsely ground black peppercorns and cumin seeds
  4. 4) Now add 2 tbsp hot oil and soda bi-carbonate to the batter prepared in step 1 and mix well.
  5. 5) Now take 1 slice of purple yam and dip it in the batter.
  6. 6) Yam slice should be coated well and then sprinkle coarsely ground pepper and jeera on one side of the yam slice.
  7. 7) Deep fry on both sides.
  8. 8) Repeat the procedure for all slices.
  9. 9) Serve hot.

My Tip:

Batter consistency should be thick. Can be served with green chutney or tomato ketchup
