ABOUT Fusion prawn curry RECIPE

It's a delectable recipe whose main star is thr prawns. Its a marriage of two cultures - Thai and South Indian

Ingredients Serving: 3

  1. Thai red curry paste - 2 tablespoons
  2. 1 Onion
  3. Coconut milk -1/2 cup
  4. 1 tsp garlic&ginger paste
  5. Tamarind paste- 1 tsp
  6. Salt to taste
  7. Prawns 300 gms
  8. Curry leaves- few
  9. Mustard seeds
  10. A pinch hing

Instructions

  1. Clean the prawns. Devein them a s clean it thoroughly . Take a Kadhai, add 2 spoons of oil to it. Add onions , garlic and ginger paste and saute it , till it's translucent. To this, add the Thai red curry paste. And mix the masala well. Saute till it leaves oil. Add the tamarind paste at this stage. Wait for it to incorporate well and then add coconut milk. Let it simmer for 5 mins or till the gravy looks cooked. Add the prawns after that. In a separate kadhai, add 1 tsp of oil, add mustard seeds to it. Then add curry leaves and the add this tempering to the cooked prawns curry. Enjoy with Malabar parota or rice!
