Ingredients to make Punjabi rajma masala

  • 1 cup rajma
  • 2 large onions
  • 2 large tomatoes
  • 2 tbs chopped green chillies
  • 1 inch piece of ginger
  • 4 to 5 minced garlic
  • 2 bay leaves, cinnamon stick,
  • 3 to 4 cloves
  • salt according to taste
  • 1 tsp cumin seeds
  • Pinch of hing
  • Some chopped coriander
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chilli powder
  • Garam masala
  • 3 tbs cream

How to make Punjabi rajma masala

  1. Soak rajma overnight and boil it in a pressure cooker with 4 to 5 whistles with bay leaves and cinnamon sticks. Add 1 tbsp oil, salt and pressure cook it.
  2. In a frying pan add 2 tbsp oil and add cumin seeds and hing into it then add ginger garlic paste and saute for few minutes.
  3. Now fry onions till they are translucent and add chopped tomatoes till the oil separates from the mixture. At this stage add all the dry spices.
  4. Now add little mashed rajma in it and simmer it for 15 to 20 minutes on a low flame.
  5. Finish it with cream and lemon juice and chopped coriander.
  6. Tada! Your rajma masala is ready.

My Tip:

Boil the rajma till it is properly cooked and mushy.
