ABOUT Dahi ambula rai RECIPE

This is a traditional dish of Odisha. Ambula is raw dried mangoes, dried mangoes cooked in curd it tastes best with steamed rice.

Ingredients Serving: 4

  1. Dried mangoes 8 pieces
  2. Curd 1 cup
  3. Mustard paste 2 teaspoon
  4. Curry leaves 10
  5. Grated ginger 1/2 teaspoon
  6. Grated coconut 2 teaspoon
  7. Black salt 1/2 teaspoon
  8. Cumin seeds 1 teaspoon
  9. Mustard seeds 1 teaspoon
  10. Dry Red Chillies 2
  11. Grated jaggery 1 teaspoon
  12. Oil 2 teaspoon
  13. Salt as per taste
  14. Water 1 cup

Instructions

  1. Soak the dried mangoes in hot water for an hour
  2. Heat a pan and add oil to it.
  3. Add mustard seeds, cumin seeds, grated ginger, curry leaves and red chillies
  4. Fry for a minute
  5. Now add soaked dried mangoes and then mustard paste.
  6. Cook for 5 minutes.
  7. Add grated jaggery, salt and cook for 2-3 minutes.
  8. Add a cup of water and bring down the flame to lowest.
  9. Whisk the curd and add to the pan.
  10. Add black salt and salt.
  11. Cook for 5 minutes.
  12. Add grated coconut, cover the pan and switch off the flame.
  13. Give a standing time of 5 minutes
  14. Serve hot with steam rice.
