About Aloo dum Recipe

Aloo dum

Ingredients to make Aloo dum

  • medium and same size potatoes 1/2 kg
  • onion paste 1 1/2 tbsp
  • ginger garlic paste 1 tsp
  • turmeric powder 1 tsp
  • coriander powder 2 tsp
  • red chili powder 2 tsp
  • fennel powder 1 tsp
  • salt to taste
  • deshi ghee 1 tbsp
  • mustard oil 1 1/2 tbsp
  • cumin 1 tsp
  • fenugreek seeds 1/2 tsp
  • chopped coriander 1 tbsp
  • garam massala powder 1/2 tsp
  • tomato puree 2 tbsp
  • curd 1 tbsp

How to make Aloo dum

  1. Peel, wash and prick the potatoes with a fork and put in water.
  2. Heat the ghee in wok or a pan, pop the fenugreek, add potatoes and shallow fry them till golden.
  3. Heat the oil in a pressure cooker, saute the cumin. Fry ginger garlic and onion paste.
  4. Add dry spices, cook for 2 minutes, add tomato puree and whipped curd, stir continuously, cook the masala/spices till the oil separates
  5. Add fried potato, salt stir for 2-3 minutes, add 1 and 1/2 cup water. Cook covered.
  6. After a pressure turn the heat sim, cook for 5 to 8 minutes and switch off the gas.
  7. Garnish with coriander and garam masala serve hot with chapati or steamed rice.
