Ingredients Serving: 4

  1. For Ragda:
  2. Vatana (dried white peas) 2 cups
  3. Turmeric powder 1/2 teaspoon
  4. Chilli powder 1/2 teaspoon
  5. Salt to taste
  6. Pinch of hing
  7. For patties:
  8. Potatoes 4 boiled and mashed
  9. Cornflour 2 tablespoon
  10. Turmeric powder 1/4 teaspoon
  11. Chilli powder 1/2 teaspoon
  12. Ginger-green chilli paste 2 teaspoon
  13. Garam masala 1/2 teaspoon
  14. For imili chutney:
  15. Tamarind (imli) soaked in water 1 tablespoon
  16. 2-3 dates
  17. Jaggery 5 tablespoon
  18. Pinch of black salt
  19. Salt as per taste
  20. For tempering (for ragda) :
  21. Mustard seeds 1/4 teaspoon
  22. A pinch of asafoetida
  23. Curry leaves a sprig
  24. Oil 2 tablespoon
  25. For green chutney :
  26. Coriander leaves 1/2 cup
  27. 3-4 green chillies
  28. Garlic 6-7 cloves
  29. Salt for taste
  30. For tomato garlic chutney :
  31. One big tomato
  32. 3-4 garlic cloves
  33. Salt for taste
  34. Red chilli powder 1 small spoon
  35. Other ingredients :
  36. Oil for shallow or deep-frying patties
  37. Sev 1 cup
  38. Chopped onions 2
  39. Chopped coriander leaves for garnishing
  40. Chat masala for sprinkling

Instructions

  1. For ragda soak the dried peas for 4 hours.
  2. Drain, add approximately 3 to 4 cups of fresh water and pressure cook until the peas are soft.
  3. Prepare the tempering by heating oil, add mustard seeds, curry leaves and asafoetida and stir till the mustard seeds splutter.
  4. Add cooked peas and add more water if required.
  5. Add salt, mix well mash the peas slightly so that the gravy becomes thicker.
  6. Simmer for 10 minutes and keep aside.
  7. For patties :
  8. Boil, peel and grate the potatoes. Add the cornflour and all masala ( ingredients) and knead to a soft dough.
  9. Divide into 8 equal portions and keep aside.
  10. Roll out each portion, press lightly on top to make a patty.
  11. Shallow fry on a non-stick pan till the patties are golden brown and crisp.
  12. Meantime take pulp of tamarind, add all ingredient mentioned for imli chutney and boil for 2-3 minute ...Keep aside to cool.
  13. Meantime take all ingredient mentioned for green chutney and grind to paste (add water if required )
  14. Roast tomato directly on flame .
  15. Remove skin and chop.
  16. Along with all ingredient mentioned for tomato chutney, take tomato and grind to paste.
  17. How to proceed for serving :
  18. Place 2 patties on a plate and pour the ragda over.
  19. Top with all the chutneys.
  20. Sprinkle the sev, onions, coriander leaves and chat masala on top. Serve immediately
