Ingredients Serving: 7

  1. To pressure cook:
  2. 1/2 cup toor dal
  3. 4 medium onions
  4. 4 medium tomatoes
  5. Vegetables (carrot, beans)- 1 cup
  6. For tempering:
  7. 2 tablespoon ghee
  8. Mustard 1/4 tsp
  9. 6 garlic pods
  10. Curry leaves few
  11. Finely chopped onions
  12. For spice mixture:
  13. Water as required
  14. 3 tablespoon sambar powder
  15. Handful of coriander
  16. Salt as per taste
  17. Tamarind pulp a coin sized

Instructions

  1. On one side- Cut the onions, tomatoes, carrot, beans and place it in a cooker. Add toor dal, sufficient water to pressure cook it. Cook it for 4 to 5 whistle. Allow it to cool.
  2. On the other side.... In a vessel add sambar powder, finely chopped coriander leaves, enough water to boil and put it on flame. Cook for 15 minutes (By the time pressure cooker whistles and cool this spice mix will be ready).
  3. Once the cooker is cooled, open the lid. Dal will be boiled nicely (if not mash it a little).
  4. Add this dal mixture to the spice mix and boil for 5 minutes.
  5. Add in salt, tamarind pulp. Mix well and boil for 5 more minutes. Check for the seasoning. Turn off the flame.
  6. In a small pan, add ingredients in same order under section "for tempering" and add it to the sambar.
  7. Now bele saru (toor dal veggie sambar) is ready.
