ABOUT Mixed Sprouts Usal RECIPE

It's a Maharashtrian cuisine.They are many variations to make Usal and this one is little spicy which is semi dry.Usually, Usal is made of sprouts of Black eye beans, channa,moong,green peas. This mixed sprouts Usal has a good balance of spicy and tangy taste. Goes well with Chapathi,pav,bread.

Ingredients Serving: 4

  1. 1/4 cup White Channa
  2. 1/4 cup Black eye peas
  3. 1/4 cup Black Chana
  4. 1/4 cup moong
  5. 1/4 cup green peas
  6. 1/2 Tsp black mustard seeds
  7. 4-5 Curry Leaves
  8. 2 medium chopped onion
  9. 1/2 Tsp red chilli powder
  10. 1/2 Tsp turmeric powder
  11. 1/2 Tsp coriander powder
  12. 1/2 Tsp Goda masala
  13. Salt
  14. 1/2 cup chopped tomatoes
  15. 1/4 cup fresh grated coconut
  16. 4-5 garlic cloves
  17. 3-4 green chilli
  18. 1 Tsp Cumin seeds
  19. Pinch of Asafoetida powder

Instructions

  1. Grind the garlic, green chillies, cumin seeds and grated coconut together to make a smooth paste and set aside.
  2. Heat a non-stick pan, add the mustard seeds, let it crackle.
  3. Add the curry leaves, onions and stir in low flame.Cook until the onions turn lightly golden.
  4. Now add the chopped tomatoes, red chilli powder, turmeric powder, coriander powder, Goda masala and a generous pinch of asafoetida (hing).
  5. Mix in the prepared paste to and cook on a medium heat for 5-8 minutes.
  6. Then add the boiled sprouts, salt and one 1/2 cup of water mix well.Bring to the boil and cook on a medium heat, until the sprouts are cooked.
  7. Simmer for 5-8 min on low flame.
  8. Now add coriander leaves, cover and cook for 4-5 minutes.
  9. When it becomes thick switch off and serve hot with chapati or pav (garnish with some more coriander leaves and cheese).
