It's a Maharashtrian cuisine, made of white peas gravy and potato Tikkis.

Ingredients Serving: 4

  1. White peas 250 gms soaked for 4hrs
  2. Potato 6 boiled and mashed
  3. Green chili paste 1 tsp
  4. Garlic paste 1tsp
  5. Ginger paste 1tsp
  6. Salt to taste
  7. Aamchur powder 2tsp
  8. Bread crumbs 1/2 bowl
  9. Semolina 1\2 bowl
  10. Onions 2 finely chopped
  11. Coriander leaves chopped
  12. Tomato 2 chopped
  13. Haldi powder
  14. Dhania powder
  15. Garam masala 1tsp
  16. Red chili powder
  17. Ingredients for Green chutney
  18. Coriander leaves
  19. Salt
  20. Lemon juice
  21. Green Chily 1-2
  22. ingredients for sweet tamarind chutney
  23. Tamarind soaked for half an hour
  24. Dates
  25. Salt
  26. Rock salt
  27. Red chili powder
  28. Roasted Cumin Powder

Instructions

  1. Pressure cook white peas with 3-4 whistle
  2. With salt and turmeric powder
  3. Take boiled potatoes in one large bowl
  4. Add green chilli, ginger, garlic paste, salt, bread crumbs and make a dough.
  5. Make flat Tikkis
  6. Roll these Tikkis in semolina
  7. Shallow fry them by adding little oil
  8. Make them crispy
  9. Make all Tikkis the same way.
  10. Heat a deep pan with oil.Add jeera, curry leaves, ginger, garlic, green chilli paste, tomato one by one and saute.
  11. Add all masala powder and saute till tomato becomes soft.
  12. Add boiled white peas and wait for a boil. Your Radga is ready.
  13. Prepare green chutney grind coriander leaves, green chilli, lemon juice and salt.
  14. Prepare tamarind sweet chutney boiling tamarind with jaggery.Sieve the pulp.Add salt, rock salt, roasted cumin powder, red chilli powder.
  15. For plating, keep Tikkis on a plate, pour Radga over it.Top it with green chutney, sweet chutney, chopped onion and chopped coriander.
