ABOUT Long Beans Stir Fry... RECIPE

This simple recipe makes for an excellent lunch idea with plain white boiled rice and ghee. Known by various names, it practically grows in any garden. Asparagus beans, yard long beans, Chinese long beans and snake beans are some of the various names given to it. These cook very fast too without much hassle and are crunchy and juicy. They are rich in minerals like Iron,Copper,Manganese,Calcium and Magnesium. They are also a good source of Vitamin A too.

Ingredients Serving: 3

  1. Long beans 300gm
  2. Red chilli flakes/ powder 1 tbsp
  3. Salt 1 tsp
  4. Garlic mince 1 tsp
  5. Dry coconut 1/4 th cup (optional)
  6. Coriander leaves chopped a fistful

Instructions

  1. Wash and chop the beans finely.
  2. In a pan, heat the oil and add the garlic mince.
  3. Saute it for a few seconds.
  4. Now add the rest of the ingredients along with the beans.
  5. On a low flame, cover and cook for the first 10 mins.
  6. After 10 mins, on a medium flame, stir fry it for 5 mins.
  7. Garnish with coriander and serve hot with boiled rice and ghee.
