Ingredients Serving: 6

  1. Rava / Suji / semolina - 500 gm
  2. curd - 500 gm
  3. ENO - 1 packet
  4. salt to taste
  5. carrot (orange) - 1
  6. carrot (red) - 1
  7. French Beans - Very few (finely chopped)
  8. cucumber - 1
  9. Armenian cucumber (Kakdi) - 1
  10. Beetroot - 1
  11. Green capsicum - 1
  12. Curry Patta - (few)
  13. Black Mustard Seeds (rai) - 1 tsp
  14. Whole Red Chilies - 4 to 5
  15. oil (for tadka)

Instructions

  1. Wash, peel and chop all the veggies finely. Keep beetroot separately as it leaves color.
  2. In a bowl add suji, curd and a little salt. Mix well. The consistency of this batter should neither be too thick nor too thin. If the batter is thick then add a little water. If thin, add suji.
  3. Add ENO to the batter and immediately pour it into the greased idli stand.
  4. Sprinkle all the veggies on top of every idli or you can mix them in the batter itself.
  5. Put this idli stand in idli patr/ pan with boiling water and let them steam cook till done or cook in the microwave. Keep the pan covered.
  6. Check if the idlis are properly cooked by inserting knife / toothpick in one of them. It should come out clean. If not, cook for a few more minutes.
  7. Remove once cooked and cut them in four pieces.
  8. Heat oil in a pan, add curry leaves and let them crackle. Add whole red chilies and pour this tadka over the idlis.
  9. Serve these stir fried idlis with tea or coffee or juice with chutney of your choice. You can serve it with sambhar too.
