Ingredients Serving: 2

  1. 2 Cups - Couscous
  2. 1 Cup - Finely sliced cabbage and carrot
  3. 3/4 Cup - Boiled kidney beans
  4. Few Capsicum slices
  5. 1 - Diced tomato
  6. 1- Diced onion
  7. Few Green chilies
  8. Salt for taste
  9. 1 tbs -Sunflower oil
  10. 4 Cups - Water or vegetable broth

Instructions

  1. Take a wide pot or vessel and add a few drops of oil. When oil is heated add diced onions, green chilli and fry for a few minutes.
  2. Next step is to add finely diced carrot and cabbage. Allow to cook for few minutes by closing the lid.
  3. Add tomatoes, capsicum slices and fry for a few seconds.
  4. Add boiled kidney beans and salt. Add 4 cups of water and bring to boil by closing the lid.You can also use vegetable broth instead of water.
  5. When water comes to boil add couscous and mix slowly. Reduce the flame and close the lid for some time.
  6. Veggie couscous is ready to serve.
