Ingredients Serving: 4

  1. Small sized brinjals (baigan) - 250 grams
  2. Oil - 6 tsp
  3. Spring Onion - 5 ( chopped)
  4. Green tomatoes - 4 (chopped)
  5. Green chilies - 10 (chopped)
  6. Turmeric powder - 1/2 tsp
  7. Salt as required
  8. Garam masala powder - 1/2 tsp
  9. Heeng powder - 1/4 tsp


  1. Wash the bengan and remove the stems, cut into two halves. Wash the tomatoes and cut into two halves.
  2. Heat oil in a pan, add garam masala powder and heeng when it gives aroma add onions fry till transparent add ginger garlic paste cook till oil seprates now add tomatoes, turmeric powder and salt cook for 7-8 mins.
  3. Add brinjals mix very well and cook till they become soft. Baigan tamatar ki sabzi is ready to serve.
