Besan Ladoo

Ingredients to make Besan Ladoo

  • 250 gms gram flour/Chickpea Flour/Besan (coarse variety)
  • 100 gms Pure ghee
  • 125 - 150 gms Powdered sugar
  • 50 gms Raisins/chironji/Almonds (optional)
  • ½ tsp cardamom Powder
  • 1.5 tbsp Milk

How to make Besan Ladoo

  1. Roast besan & ghee together on a slow flame till it comes together & has a nice golden light brown colour, keep stirring constantly.
  2. This process takes time so you can play with the flame from medium to slow but never on high as the chances of it burning is quite high.
  3. Keep stirring it all the time removing from the sides.
  4. Once it has a nice aroma and a lovely golden brown colour, sprinkle the milk and mix vigorously to incorporate and immediately switch off the flame and remove on a big plate to cool down.
  5. Once it has completely cooled down, add the powdered sugar, cardamom powder and combine.
  6. You may pulse a little mixture at a time in a small mixer jar to combine the sugar & roasted besan - ghee mixture.
  7. Once it has combined, add the nuts & shape them into roundels.
  8. If you find the mixture too soft, you may refrigerate for 20 - 30 minutes after shaping them to ensure it doesn’t lose its shape.
  9. Decorate with an almond, raisin or chironji and serve.

My Tip:

Never stop stirring the besan mixture while roasting & add the powdered sugar as per taste always.
