Ingredients Serving: 4

  1. Basmati rice - 1 Cup
  2. Water - 1 Cup
  3. Salt - 1/2 teaspoon
  4. Oil - 1 tablespoon + 2 tablespoons
  5. Soy sauce - 3 teaspoons
  6. Vinegar - 1 teaspoon
  7. Tomato sauce -1 teaspoon
  8. Red chilli sauce - 1 teaspoon
  9. Finely chopped carrots, spring onion white, bell peppers - 1/4 cup each
  10. Garlic finely chopped -1 teaspoon
  11. Salt - to taste
  12. Star anise - 1
  13. Black pepper powder - 1/2 teaspoon

Instructions

  1. Rinse rice and soak for one hour in one cup water. Pressure cook with 1/2 teaspoon of salt and one tablespoon of oil. Give one whistle and open the lid, after the steam released itself put the cooked rice in a wide plate to cool down.
  2. When the rice is cooling, heat two tablespoons of oil in a wok, add star anise and fry for a few seconds, now add garlic and saute.
  3. Add spring onion whites and saute for one minute then add all the other vegetables and saute on high flame for two minutes, add sauces, salt, black pepper powder and mix properly.
  4. Add cooked and cooled rice and stir fry for two minutes.
  5. Serve veg fried rice plain or with any Chinese curry.
