About Indo -Chinese Shrimps fried rice Recipe

Bored of egg , veg and chicken fried rice , once tried this shrimps fried rice. A wonderful dish which brought me lots of appreciations . Happy sharing it here . Sharing is caring !

Indo -Chinese Shrimps fried rice

Ingredients to make Indo -Chinese Shrimps fried rice

  • Shrimps cleaned , deveined and pat dried 20
  • For Marination :
  • turmeric Powder
  • lime juice 1/4 teaspoon
  • salt to taste
  • White pepper powder
  • olive oil 1/4 teaspoon
  • olive oil for shallow frying 2 tablespoons
  • For fried rice :
  • Basmati rice cooked al dente and completely cooled rice 1 bowl
  • onion big sized finely chopped 1
  • capsicum any coloured medium sized finely chopped 1
  • garlic pods 10 finely chopped
  • ginger paste 1/2 teaspoon
  • Green chilli paste 1 teaspoon
  • turmeric powder 1/4 teaspoon
  • Red chilli sauce 1/4 teaspoon
  • Light soya sauce 1 tablespoon
  • Spring onions 1/4 cup
  • olive oil 1.5 tablespoons.
  • sugar 1/2 teaspoon

How to make Indo -Chinese Shrimps fried rice

  1. Marinate the prawns using the ingredients under marination for 10 minutes . Refrigerate preferably for better masala absorption .
  2. Heat oil in a pan .
  3. Place the marinated prawns and fry for 7 minutes .
  4. Flip the sides and shallow fry in low flame so that shrimps wouldn’t turn rubbery .
  5. Meanwhile , heat oil in another pan in another burner .
  6. Add the chopped garlic , onions .
  7. Add garlic paste , chilli paste .
  8. Sauté till translucent .
  9. Add chopped capsicum .
  10. Add salt .
  11. Toss under high flame without burning the veggies .
  12. Simmer the flame .
  13. Add the sauces .
  14. Add the rice .
  15. Toss quickly so that rice is coated perfectly . Don’t break the rice while tossing .
  16. Add sugar .
  17. By now , the prawns would have been done . Add the fried prawns to this fried rice .
  18. Toss quickly .
  19. Finally garnish with chopped spring onions .
  20. Squeeze lime juice ( optional ) .
  21. Serve hot with ketchup .

My Tip:

The basmati rice should be cooked al dente . Add a teaspoon of oil while cooking the rice . This ensures the rice is fluffy , non-sticky and flavourful .
